Food defense is the protection of food products from intentional contamination or adulteration
The FDA Food Safety Modernization Act (FSMA) is aimed at preventing intentional acts of contamination or adulteration intended to cause wide scale harm to public health. These acts are not likely to occur but if they do, it could cause illness, death and disruptio0n of the food supply. Therefore, mitigation strategies are required for all registered facilities producing food.
Each facility is required to develop a food defense plan using an approach like HACCP to determine risks and conduct vulnerability assessment of facilities. It shall include the severity and scale of the impact on public health.
Mitigation strategies must be determined based on the vulnerability assessment at each actionable process step to assure that vulnerabilities have been minimized or prevented. Beyond that monitoring, corrective actions, and verification procedures are required.
